Ingredients

  • 200 grams raw almonds
  • 100 grams granulated sugar
  • 1 liter water
  • 1 piece cinnamon stick
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 1 pinch pinch of salt

Directions

Step 1

1. Rinse the raw almonds with cold water and place them in a bowl. Cover the almonds with water and let them soak at room temperature for 8-12 hours or overnight.

2. After soaking, drain the almonds and rinse them again. Peel the skins off the almonds by gently pinching them; they should slide off easily.

3. In a blender, combine the peeled almonds and 2 cups of the water. Blend on high for 2-3 minutes until you achieve a smooth almond paste.
