Ingredients

  • 4 cups Broccoli florets
  • 2 tablespoons Unsalted butter
  • 1 medium, diced Yellow onion
  • 3 cloves, minced Garlic
  • 4 cups Vegetable broth
  • 1 cup Heavy cream
  • 2 tablespoons All-purpose flour
  • 0.25 teaspoons Nutmeg
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons, chopped (optional for garnish) Fresh parsley

Directions

Step 1

Wash the broccoli florets thoroughly under cold water and set aside.

Step 2

In a large pot, melt the butter over medium heat. Add the diced onion and sauté for 3-4 minutes until softened.

Step 3

Add the minced garlic and cook for another 30 seconds until fragrant.

Step 4

Sprinkle the flour over the onions and garlic, stirring constantly for about 1 minute to make a roux.

Step 5

Slowly pour in the vegetable broth while whisking continuously to create a smooth base.

Step 6

Add the broccoli florets to the pot and bring the mixture to a boil. Reduce to a simmer and cook for 15-20 minutes, or until the broccoli is tender.

Step 7

Use an immersion blender to puree the soup directly in the pot, or carefully transfer the soup to a countertop blender in batches and blend until smooth.

Step 8

Return the pureed soup to the pot over low heat. Stir in the heavy cream, nutmeg, salt, and ground black pepper. Taste and adjust seasoning as needed.

Step 9

Simmer an additional 5 minutes to heat through. If the soup is too thick, add a bit more broth or water to your desired consistency.

Step 10

Ladle the soup into bowls, garnish with chopped parsley if desired, and serve warm.
