Ingredients

  • 2 lbs Chicken wings
  • 1 cup All-purpose flour
  • 1 tbsp Paprika
  • 1 tsp Garlic powder
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 4 cups Vegetable oil
  • 0.5 cup Unsalted butter
  • 0.5 cup Hot sauce (such as Frank's RedHot)
  • 1 tsp White vinegar
  • 0.5 tsp Cayenne pepper
  • 0.5 tsp Brown sugar
  • 6 pieces Celery sticks
  • 0.5 cup Blue cheese dressing

Directions

Step 1

In a large bowl, combine the flour, paprika, garlic powder, salt, and black pepper.

Step 2

Pat the chicken wings dry with paper towels, then coat them thoroughly in the flour mixture. Place the coated wings on a baking sheet and refrigerate for 1 hour to help the coating adhere.

Step 3

Heat the vegetable oil in a deep fryer or large, deep skillet to 375°F (190°C). Ensure the oil is hot enough for frying.

Step 4

Fry the wings in small batches, about 8-10 minutes per batch, until golden brown and fully cooked (165°F internal temperature). Remove and drain on paper towels.

Step 5

While the wings are frying, prepare the Buffalo sauce by melting the butter in a small saucepan over medium heat.

Step 6

Stir in the hot sauce, white vinegar, cayenne pepper, and brown sugar until smooth and combined. Simmer for 2 minutes, then remove from heat.

Step 7

Toss the cooked wings in the Buffalo sauce until evenly coated.

Step 8

Serve the wings hot with celery sticks and blue cheese dressing for dipping.
