Ingredients

  • 2 medium rutabaga
  • 2 large yellow onion
  • 3 tablespoons olive oil
  • 2 tablespoons butter
  • 2 tablespoons honey
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup water

Directions

Step 1

Peel the rutabagas and cut them into 1-inch cubes. Set aside.

Step 2

Slice the onions thinly into half-moons and set aside.

Step 3

In a large, deep skillet or sauté pan, heat 2 tablespoons of olive oil and 1 tablespoon of butter over medium heat.

Step 4

Add the sliced onions to the skillet and cook, stirring occasionally, for about 15-20 minutes, or until they are golden brown and caramelized. Reduce the heat to medium-low if the onions start to brown too quickly.

Step 5

Once the onions are caramelized, remove them from the skillet and set aside.

Step 6

In the same skillet, add the remaining 1 tablespoon of olive oil and 1 tablespoon of butter. Increase the heat to medium.

Step 7

Add the cubed rutabagas to the skillet. Sprinkle with salt and black pepper and toss to coat in the oil and butter.

Step 8

Pour in 1 cup of water and cover the skillet with a lid. Let the rutabagas steam and cook for about 10-15 minutes, stirring occasionally, until they are fork-tender and the liquid has mostly evaporated.

Step 9

Reduce the heat to low and drizzle the honey over the rutabagas. Toss to coat evenly.

Step 10

Sprinkle in the fresh thyme leaves and return the caramelized onions to the skillet. Stir everything together gently.

Step 11

Cook for another 3-5 minutes, allowing the flavors to meld and the honey to create a light glaze over the rutabagas and onions.

Step 12

Remove from heat and adjust seasoning with additional salt and pepper, if needed.

Step 13

Serve warm as a side dish to roasted meats, poultry, or as a vegetarian main course companion.
