Ingredients

  • 1 cup Buckwheat flour
  • 0.5 cup All-purpose flour
  • 1.5 teaspoons Baking powder
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 1.25 cups Buttermilk
  • 1 large Egg
  • 3 tablespoons Unsalted butter, melted
  • 3 tablespoons Honey
  • 1 teaspoon Vanilla extract
  • 0 as needed for greasing Cooking spray or additional unsalted butter
  • 0 to taste Optional toppings (e.g., fresh fruit, honey, syrup, yogurt)

Directions

Step 1

In a large mixing bowl, whisk together the buckwheat flour, all-purpose flour, baking powder, baking soda, and salt. Set aside.

Step 2

In a medium bowl, combine the buttermilk, egg, melted unsalted butter, honey, and vanilla extract. Whisk until smooth and well combined.

Step 3

Pour the wet ingredients into the dry ingredients. Gently stir until just combined, being careful not to overmix. The batter may be slightly lumpy, which is fine.

Step 4

For pancakes: Heat a large nonstick skillet or griddle over medium heat. Lightly grease with cooking spray or a small amount of butter. Pour 1/4 cup of batter for each pancake onto the skillet. Cook for 2-3 minutes until bubbles form on the surface and the edges look set. Flip and cook for another 1-2 minutes until golden brown and cooked through. Repeat with the remaining batter.

Step 5

For waffles: Preheat your waffle iron according to the manufacturer’s instructions and lightly grease with cooking spray or butter. Pour the batter into the waffle iron, spreading it evenly if needed. Close the lid and cook until the waffles are golden brown and crisp. Repeat with the remaining batter.

Step 6

Serve warm with your choice of toppings, such as fresh fruit, a drizzle of honey, maple syrup, or a dollop of yogurt.
