Ingredients

  • 1 whole (ripe, medium-sized) honeydew melon
  • 3 tablespoons granulated sugar
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 1 teaspoon (finely grated) fresh ginger
  • 0.5 whole (seeded and finely minced) serrano chili
  • 0.25 cup water

Directions

Step 1

Cut the honeydew melon in half and remove the seeds. Using a melon baller or a small spoon, scoop out the flesh into small, bite-sized balls. Alternatively, dice the melon into 1-inch cubes. Set aside in a medium-sized bowl.

Step 2

In a small saucepan over medium heat, combine the sugar, water, lime juice, lime zest, and grated ginger. Stir until the sugar dissolves completely, about 2-3 minutes.

Step 3

Add the minced serrano chili to the syrup mixture. Allow the mixture to simmer gently for 5 minutes to let the flavors meld. Remove from heat and let cool slightly.

Step 4

Pour the slightly cooled syrup over the honeydew melon pieces. Gently toss to coat the melon evenly with the syrup.

Step 5

Cover the bowl with plastic wrap and refrigerate the compote for at least 1 hour to chill and let the flavors develop.

Step 6

Before serving, give the compote a gentle stir. Serve cold, either on its own, over yogurt, or alongside vanilla ice cream. Optionally garnish with additional lime zest or thin serrano slices for an extra visual and flavor boost.
