Ingredients

  • 2.25 teaspoons Active dry yeast
  • 1.25 cups Honey
  • 2 tablespoons Molasses
  • 1.25 teaspoons Salt
  • 1 tablespoon Vegetable oil
  • 1.75 cups Whole wheat flour
  • 2.25 cups Bread flour
  • 2 tablespoons Unsweetened cocoa powder
  • 2 tablespoons Brown sugar
  • 0.25 teaspoons Caramel food coloring (optional for deep color)
  • 1 tablespoon Cornmeal (for dusting)

Directions

Step 1

In a large mixing bowl or the bowl of a stand mixer, combine the warm water and active dry yeast. Let it sit for 5-10 minutes until foamy to activate the yeast.

Stir in the honey, molasses, salt, and vegetable oil until well combined.

Step 3

Add the whole wheat flour, cocoa powder, and brown sugar. Mix until a soft dough begins to form.

Step 4

Gradually add the bread flour, about 1/2 cup at a time, kneading until the dough pulls away from the sides of the bowl and becomes smooth and elastic. This should take about 8-10 minutes if kneading by hand or 6-8 minutes using a stand mixer with a dough hook attachment.

If you desire a deeper black color, mix in the optional caramel food coloring until evenly distributed in the dough.
