Ingredients

  • 120 grams All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Ground cinnamon
  • 0.25 teaspoon Ground ginger
  • 0.25 teaspoon Ground nutmeg
  • 0.25 teaspoon Salt
  • 2 pieces Large eggs
  • 100 grams Granulated sugar
  • 2 tablespoons Honey
  • 100 grams Unsalted butter (melted and cooled slightly)
  • 1 teaspoon Vanilla extract
  • 75 grams Mini chocolate chips

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 12-shell madeleine pan or prepare it with nonstick spray.

Step 2

In a medium bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, ground ginger, ground nutmeg, and salt. Set aside.

Step 3

In a large mixing bowl, beat the eggs and granulated sugar together with a hand mixer or stand mixer on medium speed until pale and fluffy, about 3-4 minutes.

Step 4

Add the honey and vanilla extract to the egg mixture and mix until well combined.

Step 5

Gradually fold in the dry ingredients using a spatula, being careful not to overmix.

Step 6

Slowly drizzle in the melted butter, folding gently to incorporate it fully into the batter.

Step 7

Fold in the mini chocolate chips until evenly distributed throughout the batter.

Step 8

Spoon the batter into the prepared madeleine pan, filling each shell about three-quarters full.

Step 9

Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown and the centers spring back when lightly touched.

Step 10

Remove the pan from the oven and let the madeleines cool in the pan for 2 minutes before transferring them to a wire rack to cool completely.

Step 11

Optional: Dust with powdered sugar before serving for an extra touch of sweetness and presentation.
