Ingredients

  • 3 pounds Beef short ribs
  • 0.5 cups Soy sauce
  • 0.25 cups Honey
  • 4 pieces Garlic cloves, minced
  • 1 tablespoon Fresh ginger, grated
  • 2 tablespoons Rice vinegar
  • 1 tablespoon Sriracha
  • 0.25 cups Peanut butter (smooth)
  • 0.5 cups Coconut milk
  • 1 tablespoon Brown sugar
  • 2 tablespoons Lime juice
  • 1 teaspoon Sesame oil
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 stalks Green onions, sliced
  • 1 tablespoon Sesame seeds

Directions

Step 1

In a large mixing bowl, prepare the marinade by combining soy sauce, honey, minced garlic, grated ginger, rice vinegar, and Sriracha. Mix well.

Step 2

Place the beef short ribs in a large resealable plastic bag or shallow baking dish. Pour the marinade over the ribs, ensuring they are fully coated. Seal the bag or cover the dish, and refrigerate for at least 2 hours, or overnight for best results.

Step 3

Preheat your oven to 325°F (165°C).

Step 4

Transfer the marinated short ribs to a large baking dish or Dutch oven, pouring any remaining marinade over the meat. Cover tightly with aluminum foil or a lid.

Step 5

Bake in the preheated oven for about 2.5 to 3 hours, or until the short ribs are tender and the meat is falling off the bone.

Step 6

While the ribs are cooking, prepare the spicy peanut glaze. In a small saucepan, combine peanut butter, coconut milk, brown sugar, lime juice, sesame oil, and a pinch of salt. Cook over medium heat, stirring constantly until smooth and heated through. Adjust seasoning to taste if necessary.

Step 7

Once the ribs are done, remove them from the oven and carefully brush the spicy peanut glaze generously over each piece. Reserve some glaze for serving.

Step 8

Optional: For extra caramelization, place the glazed ribs under the broiler for 2-3 minutes, keeping a close eye to avoid burning.

Step 9

Transfer the ribs to a serving platter. Garnish with sliced green onions and sesame seeds.

Step 10

Serve immediately with steamed rice or your choice of side dishes. Drizzle with additional glaze for added flavor.
