Ingredients

  • 4 whole Vidalia onions
  • 3 tablespoons Honey
  • 2 tablespoons Unsalted butter
  • 1 tablespoon Olive oil
  • 1 teaspoon Fresh thyme leaves
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Balsamic vinegar (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Peel the Vidalia onions, trimming the root end slightly to allow them to sit flat, but do not remove the root entirely to help hold the onion together.

Step 3

Cut each onion into quarters without cutting all the way through, so the onion opens like a flower.

Step 4

Place the onions into a baking dish, cut-side up, leaving some space between them.

Step 5

In a small saucepan, combine the honey, unsalted butter, and olive oil. Heat gently over low heat until the butter is melted and the mixture is smooth. Remove from heat.

Step 6

Brush the honey-butter mixture generously over each onion, ensuring it gets into the layers. Reserve a small amount for later basting.

Step 7

Sprinkle the onions with fresh thyme leaves, salt, and black pepper.

Step 8

Cover the baking dish with aluminum foil and place in the preheated oven. Roast for 30 minutes.

Step 9

Remove the foil, baste the onions with the remaining honey-butter mixture, and roast uncovered for an additional 20 minutes, or until the onions are caramelized and tender.

Step 10

If desired, drizzle the onions with balsamic vinegar during the last 5 minutes of roasting for a tangy, sweet finish.

Step 11

Serve warm as a side dish, garnished with additional thyme, if desired.
