Ingredients

  • 8 slices Sourdough bread
  • 1 cup Hummus
  • 2 cups Arugula or baby spinach
  • 1 large Avocado
  • 1 teaspoon Lemon juice
  • 0.5 cup Feta cheese (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Peel the carrots and cut them into thin sticks, approximately 3 inches long.
