Ingredients

  • 14 ounces kielbasa (fully cooked sausage)
  • 1.5 pounds baby potatoes
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 3 cloves garlic
  • 2 tablespoons Dijon mustard
  • 3 tablespoons honey
  • 0.25 cup chicken broth
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 tablespoons fresh parsley (optional for garnish)

Directions

Step 1

Wash and quarter the baby potatoes. If the potatoes are particularly small, cut them in half instead.

Step 2

Slice the kielbasa into 1/2-inch thick rounds and set it aside.

Step 3

Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium heat.

Step 4

Add the potatoes and season them with salt and pepper. Cook for 12-15 minutes, stirring occasionally, until the potatoes are golden brown and tender. Remove the potatoes from the skillet and set aside.

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the sliced kielbasa and cook for 5-7 minutes until browned on both sides. Remove the kielbasa and set aside with the potatoes.
