Preheat your oven to 200°C (390°F).
Peel the kumara (sweet potatoes) and carrots, and chop them into evenly sized chunks. Set aside.
Place a large pot of salted water on the stove and bring it to a boil. Add the kumara and carrots, and cook for 20 minutes, or until they are tender when pierced with a fork.
While the veggies are boiling, prepare the honey mustard sauce by mixing the Dijon mustard, honey, crushed garlic cloves, 1 tablespoon olive oil, salt, and black pepper in a small bowl.
Pat the chicken breasts dry with a paper towel and season lightly with salt and pepper.
Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken breasts on each side for 2 minutes until golden brown.
Pour the prepared honey mustard sauce over the chicken in the skillet. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken reaches an internal temperature of 74°C (165°F).
Once the kumara and carrots are cooked, drain them and transfer them back to the pot. Add the butter and milk, and mash everything together until smooth and creamy. Season with additional salt and black pepper to taste.
To serve, evenly distribute the kumara carrot mash onto plates. Place a baked honey mustard chicken breast on top of the mash and drizzle with any remaining sauce from the skillet.
