Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 large yellow onion, sliced
  • 3 cloves garlic cloves, minced
  • 2 medium apples, thinly sliced
  • 1 cup chicken broth
  • 2 tablespoons Dijon mustard
  • 3 tablespoons honey
  • 1 teaspoon fresh thyme leaves
  • 1 tablespoon unsalted butter

Directions

Step 1

Season the chicken breasts with salt and pepper on both sides.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear for 3-4 minutes on each side, until golden brown. Remove the chicken from the skillet and set aside.

In the same skillet, add the remaining tablespoon of olive oil. Sauté the sliced onion for 3-4 minutes, until softened. Add the minced garlic and cook for an additional 1 minute.
