Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 2 tbsp cornstarch
  • 2 tbsp vegetable oil
  • 2 cups broccoli florets
  • 1 cup carrots, sliced thin
  • 1 red bell pepper, sliced
  • 3 garlic cloves, minced
  • 3 tbsp honey
  • 3 tbsp Dijon mustard
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 2 tbsp water
  • 1 tsp sesame seeds (optional, for garnish)
  • 2 tbsp green onions, chopped (optional, for garnish)

Directions

Step 1

Slice the chicken breasts into thin strips and place them in a bowl. Toss with cornstarch until evenly coated.

Step 2

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken strips and cook for 5-6 minutes, stirring occasionally, until browned and cooked through. Remove the chicken from the skillet and set it aside.

In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the broccoli florets, sliced carrots, and red bell pepper. Stir fry the vegetables for 5-7 minutes, until they are tender but still crisp.
