Ingredients

  • 2 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 0.25 teaspoon Salt
  • 0.5 cup Unsalted butter
  • 0.75 cup Honey
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 0.75 cup Milk
  • 1.5 cups Fresh blueberries
  • 1 tablespoon All-purpose flour (for coating blueberries)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease the cups.

Step 2

In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, melt the butter and allow it to cool slightly. Whisk in the honey until smooth, followed by the egg and vanilla extract.

Step 4

Add half of the dry ingredients to the wet mixture, stirring gently, then mix in the milk. Stir in the remaining dry ingredients until just combined. Be careful not to overmix.

Step 5

Toss the blueberries with 1 tablespoon of flour in a small bowl to prevent them from sinking in the batter. Gently fold the blueberries into the batter using a spatula.

Step 6

Divide the batter evenly among the muffin cups, filling each about 3/4 full.

Step 7

Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely before serving.
