Ingredients

  • 12 pitted Medjool dates
  • 1 cup raw almonds
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon sea salt
  • 0.5 cup unsweetened shredded coconut (optional for coating)

Directions

Step 1

Place the raw almonds in a food processor and pulse until finely chopped, but not completely turned into a powder.

Step 2

Add the pitted dates to the food processor and pulse until they’re broken down and combined with the almonds, forming a sticky mixture.

Step 3

Add the honey, vanilla extract, ground cinnamon, and sea salt to the food processor. Pulse again until all the ingredients are fully combined into a cohesive dough-like texture.

Step 4

Scoop out about 1 tablespoon of the mixture and roll it between your palms to form a small ball. Repeat with the rest of the mixture to make about 12 balls.

Step 5

If using shredded coconut, spread it out on a plate. Roll each ball in the coconut to coat them evenly.

Step 6

Place the honey almond date balls in an airtight container and refrigerate for at least 30 minutes to firm up before serving.
