  • 4 medium roma tomatoes
  • 2 tablespoons olive oil

  • 0.25 teaspoon red pepper flakes (optional)
  • 6 leaves fresh basil leaves

Directions

Step 1

Wash and dry the zucchini and roma tomatoes. Slice the zucchini into half-moon shapes, about 1/4-inch thick. Dice the tomatoes into small chunks.

Step 2

Peel and finely mince the garlic cloves. Set all your prepped ingredients aside.

Step 3

In a large skillet, heat the olive oil over medium heat until it shimmers.

Add the minced garlic to the skillet and sauté for 1-2 minutes, stirring frequently, until it becomes fragrant but not browned.
