Preheat your oven to 325°F (165°C).
Remove the turkey from its packaging and pat it dry with paper towels. Remove the neck and giblets and set aside if you plan to use them for gravy or broth.
In a small bowl, mix the softened butter, maple syrup, chopped sage, rosemary, and thyme. Add 1 tablespoon of salt and 1/2 tablespoon of black pepper to the butter mixture.
Gently loosen the skin of the turkey around the breast area without tearing it. Spread half the flavored butter mixture under the skin, directly onto the meat. Rub the remaining butter over the outside of the turkey.
Season the turkey cavity with 1 tablespoon of salt and 1/2 tablespoon of black pepper. Stuff the cavity with the quartered onion, Granny Smith apple, carrot, and celery.
Place the turkey on a roasting rack inside a large roasting pan. Pour the apple cider and chicken or turkey stock into the bottom of the pan to keep the turkey moist during cooking.
Cover the turkey loosely with aluminum foil and place it in the preheated oven. Roast for 13-15 minutes per pound until the internal temperature reaches 165°F (75°C) in the thickest part of the breast and 175°F (80°C) in the thigh.
About 30 minutes before the turkey is fully cooked, remove the aluminum foil to allow the skin to brown and crisp up.
Once cooked, remove the turkey from the oven and let it rest for 20-30 minutes before carving. This allows the juices to redistribute, ensuring a moist and flavorful turkey.
