  • 0.5 teaspoon black pepper
  • 2 cups chicken or vegetable broth
  • 2 tablespoons, finely chopped fresh parsley

Directions

Step 1

Rinse the dried lima beans thoroughly under cool running water. Place them in a large bowl and cover with water, ensuring the beans are submerged by at least 2 inches. Soak the beans for 6-8 hours or overnight.

Drain the soaked beans and rinse them again. Set aside.

Heat olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion, garlic, carrot, and celery. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are softened and fragrant.
