In a large mixing bowl, combine the vital wheat gluten, chickpea flour, nutritional yeast, smoked paprika, ground fennel seeds, garlic powder, onion powder, dried sage, salt, black pepper, and ground cayenne (if using). Mix until well combined.
In a separate bowl or measuring cup, whisk together the soy sauce, vegetable broth, liquid smoke, maple syrup, and olive oil.
