  • 1 medium cucumber
  • 1 large avocado
  • 8 pieces imitation crab sticks
  • 0.5 cup mayonnaise
  • 2 tablespoons sriracha
  • 0.25 cup soy sauce

Directions

Step 1

Rinse the sushi rice under cold water until the water runs clear.

Step 2

Combine the rice and 2 cups of water in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and cook for 18-20 minutes, or until the water is absorbed and the rice is tender.

Step 3

In a small bowl, mix rice vinegar, sugar, and salt. Gently fold this mixture into the cooked rice, then allow it to cool to room temperature.
