Directions

Step 1

Start by washing and peeling the Russet potatoes. Using a mandoline slicer or a sharp knife, slice the potatoes thinly (about 1/8-inch) and evenly to ensure consistent cooking.

Rinse the potato slices under cold water until the water runs clear, removing excess starch. Pat them dry thoroughly with paper towels.

In a large bowl, combine sour cream, onion powder, dried parsley flakes, salt, garlic powder, and black pepper. Whisk until the mixture is smooth and well combined.

In a heavy-bottomed pan or a fryer, heat vegetable oil to 350°F (175°C). Make sure the oil is sufficient to submerge the potatoes and heated well to maintain the crispiness.
