Ingredients

  • 1.5 cups Warm water
  • 2.25 teaspoons Active dry yeast
  • 1 tablespoon Granulated sugar
  • 1 teaspoon Salt
  • 4 cups All-purpose flour
  • 4 tablespoons Unsalted butter, melted
  • 2 third_cups Baking soda
  • 1 unit Large egg, beaten (egg wash)
  • 1 tablespoon Coarse sea salt (for topping)

Directions

Step 1

In a large mixing bowl, combine the warm water, active dry yeast, and sugar. Stir gently and let the mixture sit for 5 minutes until the yeast is frothy.

Step 2

Add salt, all-purpose flour, and melted butter to the yeast mixture. Stir with a wooden spoon or mix on low speed if using a stand mixer fitted with a dough hook. Knead until a smooth and elastic dough forms, about 5 minutes.

Step 3

Transfer the dough to a lightly greased bowl. Cover with a clean kitchen towel and let it rise in a warm place for about an hour, or until doubled in size.

Step 4

Preheat your oven to 425°F (220°C). Line two baking sheets with parchment paper and set aside.

Step 5

Once risen, punch down the dough and turn it onto a lightly floured surface. Divide the dough into 6 equal pieces. Roll each piece into a long rope, about 18 inches long, and cut into 1-inch pieces to form bites.

Step 6

In a large pot, bring about 10 cups of water and the baking soda to a boil. Reduce the heat to a simmer and gently drop the pretzel bites (8-10 at a time) into the water. Let them cook for about 30 seconds, then remove with a slotted spoon and place on the prepared baking sheets.

Step 7

Lightly brush each pretzel bite with the beaten egg wash and sprinkle with coarse sea salt.

Step 8

Bake in the preheated oven for 12-15 minutes, or until the pretzel bites are golden brown.

Step 9

Remove from the oven and let cool slightly before serving. Enjoy with mustard, cheese sauce, or your favorite dip!
