Ingredients

  • 250 grams all-purpose flour
  • 50 grams granulated sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoons salt
  • 85 grams unsalted butter (cold, diced)
  • 120 milliliters whole milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 50 grams optional: raisins or dried fruit

Directions

Step 1

Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

Step 3

Add the cold, diced butter to the dry ingredients. Using a pastry cutter or your fingertips, rub the butter into the flour mixture until it resembles coarse crumbs.

Step 4

In a separate bowl, whisk together the milk, egg, and vanilla extract.

Step 5

Gradually pour the wet ingredients into the dry ingredients, mixing gently with a fork until a dough forms. Be careful not to overmix.

Step 6

If using raisins or dried fruit, fold them into the dough at this stage.

Step 7

Turn the dough out onto a lightly floured surface and gently knead it a few times to bring it together. Press or roll the dough into a 2.5 cm (1 inch) thick circle.

Step 8

Use a round biscuit cutter to cut out scones and place them on the prepared baking sheet. Gather the scraps, re-roll, and cut out more scones as needed.

Step 9

Optional: Brush the tops of the scones with a little milk or a beaten egg for a shiny, golden finish.

Step 10

Bake in the preheated oven for 12-15 minutes, or until the scones are risen and golden brown.

Step 11

Allow the scones to cool slightly on a wire rack before serving. Serve warm with butter, clotted cream, or jam.
