Ingredients

  • 250 ml Fresh lime juice
  • 2 whole limes Lime zest
  • 200 grams Granulated sugar
  • 100 ml Water
  • 1 teaspoon Citric acid (optional, for extra tanginess)

Directions

Step 1

Wash and dry the limes, then zest two of them using a microplane grater or zester. Be careful not to include the bitter white pith.

Juice enough limes to yield 250 ml (approximately 1 cup) of fresh lime juice. Set aside.

In a small saucepan, combine 200 grams of granulated sugar and 100 ml of water. Heat over medium heat, stirring constantly, until the sugar is fully dissolved to create a simple syrup.
