Once the milk mixture reaches 190°F, remove the pot from the heat and slowly stir in the vinegar or lemon juice. You will notice curds beginning to form almost immediately.

Let the mixture sit undisturbed for 5–10 minutes. This resting period allows the curds to fully separate from the whey.

Step 4

Set a large colander over a bowl or sink and line it with several layers of cheesecloth or a fine kitchen towel. Carefully pour the curds and whey into the colander to drain.

Step 5

For a creamier ricotta, allow the curds to drain for 5–10 minutes. For a firmer texture, drain for 15–20 minutes. Avoid pressing or squeezing the curds, as this can make the cheese too dry.

Step 6

Once the ricotta has reached your desired consistency, transfer it to a clean bowl. Use immediately or refrigerate in an airtight container for up to 4–5 days.
