Ingredients

  • 1 cup Raw almonds
  • 1 cup Raw cashews
  • 0.5 cup Raw walnuts
  • 0.5 cup Raw hazelnuts
  • 1 tablespoon Neutral oil (e.g., avocado or coconut oil, optional)
  • 0.25 teaspoon Salt
  • 1 tablespoon Honey or maple syrup (optional, for sweetness)

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Spread the almonds, cashews, walnuts, and hazelnuts in a single layer on a baking sheet.

Step 3

Roast the nuts in the preheated oven for 8–10 minutes, stirring halfway through, until lightly golden and fragrant. Be careful not to burn them.

Step 4

Remove the nuts from the oven and allow them to cool for 5 minutes.

Step 5

Transfer the roasted nuts to a food processor or high-speed blender.

Step 6

Process the nuts, pausing occasionally to scrape down the sides, for 5–10 minutes. They will go through stages: crushed nuts, coarse meal, thick paste, and finally smooth butter.

Step 7

If the mixture seems too dry and isn’t coming together, add the neutral oil 1 teaspoon at a time until the desired consistency is reached.

Step 8

Once smooth, add the salt and optional honey or maple syrup, and blend again until fully incorporated.

Step 9

Taste the nut butter and adjust sweetness or salt as desired.

Step 10

Transfer the homemade mixed nut butter to an airtight jar or container and store in the refrigerator for up to 1 month.
