Directions

Step 1

In a large microwave-safe bowl, sprinkle the packets of unflavored gelatin over 1/2 cup of cold water. Let it sit for 10 minutes to bloom.

In the same bowl, add granulated sugar, light corn syrup, and an additional 1 cup of cold water. Stir gently to combine.

Microwave the mixture on high for 2 minutes, then stir well. Continue microwaving in 1-minute intervals until the mixture reaches 240°F (use a candy thermometer to check). This should take about 3-5 minutes total, depending on your microwave.

Step 4

Using a stand mixer or an electric hand mixer, begin whipping the hot mixture on low speed, gradually increasing to high speed. Whip for 8-10 minutes, or until the mixture becomes white, fluffy, and significantly thickened.
