Ingredients

  • 1 cup Yellow mustard seeds
  • 0.5 cup Brown mustard seeds
  • 1 cup Apple cider vinegar
  • 0.75 cup Water
  • 2 tablespoons Honey
  • 1 teaspoon Fresh rosemary
  • 1 teaspoon Fresh thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground turmeric

Directions

Step 1

In a medium bowl, combine the yellow mustard seeds and brown mustard seeds with the apple cider vinegar and water. Stir well, cover with plastic wrap, and let the mixture sit at room temperature for 24 to 48 hours. The liquid will help soften the seeds and make them easier to blend.

Step 2

After soaking, transfer the mustard seed mixture to a food processor or blender. Pulse a few times to break up the seeds but retain some texture for a rustic finish.

Step 3

Add honey, fresh rosemary, fresh thyme, salt, and ground turmeric to the blender. Blend until the mixture reaches your desired consistency. For a smoother mustard, blend for a longer time; for a coarser mustard, pulse less.

Step 4

Taste and adjust seasoning if necessary. If the mixture is too thick for your liking, you can thin it out with a small amount of water, adding a teaspoon at a time until the desired consistency is achieved.

Step 5

Transfer the herb mustard to a sterilized jar or airtight container. Let it rest in the refrigerator for at least 12 hours before using to allow the flavors to meld together.

Step 6

Store in the refrigerator for up to 1 month. Enjoy as a condiment, marinade base, or salad dressing ingredient!
