Ingredients

  • 1 pound Boneless, skinless chicken thighs
  • 0.75 cup Cornstarch
  • 0.25 cup All-purpose flour
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 large Eggs
  • 2 cups Vegetable oil
  • 0.25 cup Soy sauce
  • 2 tablespoons Rice vinegar
  • 2 tablespoons Hoisin sauce
  • 2.5 tablespoons Sugar
  • 0.5 cup Chicken broth
  • 2 cloves Fresh garlic, minced
  • 1 teaspoon Fresh ginger, minced
  • 4 whole Dried red chili peppers
  • 0.5 teaspoon Sesame oil
  • 2 stalks Green onions, sliced
  • 1 teaspoon Sesame seeds

Directions

Step 1

Cut the chicken thighs into bite-sized pieces and set aside.

Step 2

In a medium bowl, mix together the cornstarch, flour, salt, and black pepper.

Step 3

In another bowl, whisk the eggs.

Step 4

Dip each chicken piece first into the egg mixture and then coat with the cornstarch-flour mixture. Set the coated pieces aside on a plate.

Step 5

Heat the vegetable oil in a large skillet or wok over medium-high heat until it reaches 350°F (175°C).

Step 6

Fry the chicken in batches to avoid overcrowding the pan. Cook each batch for about 4-5 minutes or until golden brown and crispy. Remove and drain on a paper towel-lined plate.

Step 7

In a small bowl, whisk together soy sauce, rice vinegar, hoisin sauce, sugar, and chicken broth to prepare the sauce. Set aside.

Step 8

In a clean skillet or wok, heat 1 tablespoon of vegetable oil over medium heat. Add minced garlic, ginger, and dried red chili peppers. Stir-fry for about 30 seconds until fragrant.

Step 9

Pour the sauce mixture into the skillet and bring it to a simmer. Let it cook for 2-3 minutes, stirring frequently, until it thickens slightly.

Step 10

Add the fried chicken to the sauce and toss to coat evenly.

Step 11

Drizzle sesame oil over the chicken and stir to combine.

Step 12

Garnish with sliced green onions and sesame seeds before serving.

Step 13

Serve hot with steamed rice or your favorite noodles.
