  • 28 ounces diced tomatoes
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup beef broth
  • 2 tablespoons tomato paste
  • 1 bay leaf

Directions

Step 1

Heat the olive oil in a large pot over medium heat. Add the chopped onion and green bell pepper. Sauté until the onion is translucent, about 5 minutes.

Add the minced garlic and continue to sauté for another minute until fragrant.
