Ingredients

  • 2 cups Chickpea flour
  • 4 large Eggs
  • 1 tbsp Olive oil
  • 0.5 tsp Salt
  • 1 tbsp Water

Directions

Step 1

Place the chickpea flour in a large mixing bowl and make a well in the center.

Step 2

In a separate bowl, whisk together the eggs, olive oil, and salt until well combined.

Step 3

Pour the egg mixture into the well of chickpea flour, using a fork to gradually incorporate the flour into the wet ingredients.

Step 4

Add water if necessary, one tablespoon at a time, until the dough comes together. It should be firm but not sticky.

Step 5

Turn the dough onto a lightly floured surface and knead for about 5-7 minutes until smooth and elastic.

Step 6

Wrap the dough tightly in plastic wrap and let it rest at room temperature for 30 minutes.

Step 7

Divide the rested dough into four pieces. Keep each piece covered as you work.

Step 8

Using a pasta machine or a rolling pin, roll out each dough piece into thin sheets. Aim for about 1/16 inch thickness.

Step 9

Cut the sheets into your desired pasta shapes such as fettuccine or tagliatelle.

Step 10

Let the pasta dry slightly on a floured surface while you bring a large pot of salted water to a boil.

Step 11

Cook the pasta in boiling water for 3-6 minutes until it floats to the surface and is al dente.

Step 12

Drain and serve immediately with your choice of sauce.
