Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 1 cup pickle juice
  • 1 cup milk
  • 1 large egg
  • 1.5 cups all-purpose flour
  • 1 tablespoon powdered sugar
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon paprika
  • 1 teaspoon baking powder
  • 2 cups vegetable oil
  • 1 cup butter
  • 2 cups self-rising flour
  • 0.75 cup buttermilk

Directions

Step 1

Pound the chicken breasts to even thickness, then cut each into 4 pieces. Marinate the chicken pieces in pickle juice and refrigerate for at least 1 hour.

In a medium bowl, whisk together milk and egg. In another bowl, combine flour, powdered sugar, salt, pepper, and paprika.

Remove the chicken from the marinade and pat dry with paper towels. Dredge each piece first in the flour mixture, then dip into the milk and egg mixture, and return to the flour mixture, coating well.

Heat vegetable oil in a skillet over medium-high heat. Fry chicken pieces for about 3-4 minutes on each side, until golden brown and cooked through. Drain on paper towels.
