Directions

Step 1

Wash and peel the potatoes (if desired). Cut them into small, evenly sized cubes, about 1/2-inch in size, for even cooking.

Place the cubed potatoes in a large pot of cold, salted water. Bring to a boil over medium-high heat and let the potatoes cook for 5 minutes. This partially cooks the potatoes and helps achieve a fluffy interior once roasted. Drain and pat the potatoes dry.
