Ingredients

  • 1.5 pounds beef stew meat (cut into 1-inch cubes)
  • 3 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 1 medium yellow onion (diced)
  • 3 cloves garlic cloves (minced)
  • 2 cups beef broth
  • 2 tablespoons soy sauce
  • 1 tablespoon Worcestershire sauce
  • 0.5 teaspoon dried thyme
  • 1 bay leaf
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 2 tablespoons chopped parsley (optional for garnish)

Directions

Step 1

In a medium bowl, mix together the flour, salt, black pepper, and garlic powder. Toss the beef cubes in the flour mixture until evenly coated, shaking off any excess flour.

Step 2

Heat olive oil and butter in a large skillet or Dutch oven over medium-high heat. Once hot, add the beef cubes in batches, searing them until golden brown on all sides. Transfer the seared beef to a plate and set aside.

Step 3

In the same skillet, reduce the heat to medium and add the diced onion. Cook for 3-4 minutes until softened. Add the minced garlic and cook for another minute until fragrant.

Step 4

Pour in the beef broth, soy sauce, and Worcestershire sauce. Stir well, scraping up any browned bits from the bottom of the skillet for added flavor.

Step 5

Return the seared beef cubes to the skillet. Add the dried thyme and bay leaf to the mixture. Bring everything to a simmer, then reduce the heat to low, cover, and cook for 70-80 minutes, stirring occasionally, until the beef is tender.

Step 6

In a small bowl, whisk together the cornstarch and water to create a slurry. Gradually stir this mixture into the skillet to thicken the sauce. Let it cook for an additional 5 minutes until the sauce reaches your desired thickness.

Step 7

Remove the bay leaf and discard. Taste and adjust seasoning with additional salt and pepper, if needed.

Step 8

Garnish with chopped parsley, if desired, and serve warm over rice, mashed potatoes, or crusty bread.
