Ingredients

  • 4 cups cooked rice
  • 1 cup boneless, skinless chicken breast (optional)
  • 2 tablespoons vegetable oil
  • 1 cup carrots, diced
  • 0.5 cup frozen peas
  • 0.25 cup green onions, sliced
  • 2 large eggs
  • 3 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

If using chicken, dice it into small, bite-sized pieces. Season with a pinch of salt and pepper. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat, and cook the chicken until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.

Step 2

In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the diced carrots and cook for 2-3 minutes until they start to soften.

Step 3

Push the carrots to one side of the skillet and crack the eggs into the empty space. Scramble the eggs gently with a spatula until fully cooked, then mix them with the carrots.

Add the cooked rice to the skillet, breaking up any clumps with a spatula. Stir in the frozen peas and cooked chicken (if using). Cook for 2-3 minutes, stirring frequently.

Step 5

Pour the soy sauce and sesame oil over the rice. Stir well to evenly coat all the ingredients. Season with salt and pepper to taste.

Remove the skillet from heat and mix in the sliced green onions.
