  • 6 large eggs
  • 2 tablespoons milk
  • 1.5 cups shredded cheddar cheese
  • 2 stalks, thinly sliced scallions

Directions

Step 1

Wash, peel, and dice the russet potatoes into small cubes, about 1/2-inch in size.

Heat 2 tablespoons of olive oil in a large non-stick or cast-iron skillet over medium heat.
