Ingredients

  • 3 cups Cauliflower florets
  • 1 cup Shredded mozzarella cheese
  • 0.25 cup Grated Parmesan cheese
  • 1 large Egg
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Dried oregano
  • 0.25 teaspoon Salt
  • 0.5 cup Low-carb pizza sauce
  • 0.75 cup Shredded mozzarella cheese (for topping)
  • 0.25 cup Sliced pepperoni
  • 2 tablespoons Fresh basil leaves

Directions

Step 1

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Pulse the cauliflower florets in a food processor until they resemble rice-like grains. This should yield roughly 3 cups of cauliflower rice.

Step 3

Steam the cauliflower rice for 5 minutes, then transfer it to a clean kitchen towel and let it cool slightly. Once cool, wrap the cauliflower tightly in the towel and squeeze out as much moisture as possible.

Step 4

In a medium bowl, combine the cauliflower rice, 1 cup shredded mozzarella, grated Parmesan, egg, garlic powder, dried oregano, and salt. Mix until well combined.

Step 5

Spread the mixture onto the prepared baking sheet, forming a circle or rectangle about 1/4-inch thick. Ensure the edges are slightly thicker to mimic a classic pizza crust.

Step 6

Bake the crust in the preheated oven for 15-20 minutes, or until it turns golden brown and feels firm to the touch.

Step 7

Remove the crust from the oven and spread the low-carb pizza sauce evenly over the surface.

Step 8

Sprinkle 3/4 cup shredded mozzarella cheese over the sauce, then top with sliced pepperoni or any other toppings of your choice.

Step 9

Return the pizza to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.

Step 10

Garnish the pizza with fresh basil leaves and let it cool slightly before slicing and serving.
