Ingredients

  • 250 grams All-purpose flour
  • 150 grams Granulated sugar
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 150 grams Unsalted butter (cold, cubed)
  • 2 large Eggs
  • 30 ml Milk
  • 3 medium Apples (preferably tart, such as Granny Smith)
  • 1 teaspoon Ground cinnamon
  • 2 tablespoons Brown sugar
  • 1 tablespoon Powdered sugar (optional, for dusting)

Directions

Step 1

Preheat your oven to 175°C (350°F). Grease and line the bottom of a 9-inch (23 cm) round springform cake pan with parchment paper.

Step 2

In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.

Step 3

Add the cold cubed butter to the dry ingredients. Using your fingertips or a pastry cutter, work the butter into the flour mixture until it resembles coarse crumbs.

Step 4

In a small bowl, whisk together 1 egg and the milk. Pour this into the flour-butter mixture and stir until just combined. The dough should be thick but pliable.

Step 5

Peel, core, and thinly slice the apples. Place them in a medium bowl and toss with cinnamon and brown sugar.

Step 6

Press two-thirds of the dough into the prepared cake pan, spreading it evenly across the bottom and slightly up the sides.

Step 7

Layer the cinnamon-coated apple slices over the dough in an even layer.

Step 8

Crumble the remaining dough over the apples. It doesn’t have to fully cover the apples; a rustic look is perfect for this cake.

Step 9

In a small bowl, beat the remaining egg and lightly brush it over the top of the cake dough for a golden finish.

Step 10

Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the dough comes out clean.

Step 11

Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Step 12

Dust with powdered sugar before serving, if desired. Serve warm or at room temperature.
