Ingredients

  • 170 grams Unsalted butter
  • 3 large Egg yolks
  • 1 tablespoon Fresh lemon juice
  • 1 tablespoon Water
  • 0.25 teaspoon Salt
  • 1 pinch Cayenne pepper (optional)

Directions

Step 1

1. Melt the butter in a small saucepan over low heat until completely melted. Set aside and keep warm, making sure it does not cool or solidify.

Step 2

2. In a medium-sized, heatproof bowl, whisk together the egg yolks, lemon juice, and water until well combined and slightly frothy.

Step 3

3. Place the bowl over a saucepan filled with a few inches of simmering water, ensuring the bottom of the bowl does not touch the water. Whisk continuously to prevent the eggs from scrambling.

Step 4

4. As the egg mixture warms, it will begin to thicken. This should take around 3-5 minutes. When it reaches a creamy consistency, remove the bowl from the heat.

Step 5

5. Slowly drizzle the melted butter into the egg mixture while continuously whisking. Start with a few drops at a time, then gradually increase the flow as the sauce begins to come together.

Step 6

6. Once all the butter is incorporated, whisk in the salt and a pinch of cayenne pepper, if desired. Taste and adjust seasoning as needed.

Step 7

7. If the sauce is too thick, whisk in a small amount of warm water, a teaspoon at a time, until the desired consistency is reached.

Step 8

8. Serve immediately over your dish of choice, or keep warm for up to 30 minutes by placing the bowl over very low heat, stirring occasionally.
