Ingredients

  • 4 medium (about 2 pounds) sweet potatoes
  • 1 15-ounce can (drained weight) canned peach slices in juice
  • 1 cup salted roasted cashews
  • 4 tablespoons unsalted butter
  • 0.5 cup light brown sugar
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 2 tablespoons all-purpose flour
  • 0.25 cup milk (any kind)
  • 1 cup mini marshmallows (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x9-inch baking dish with a light coating of butter or non-stick cooking spray.

Step 2

Peel the sweet potatoes and cut them into 1/2-inch thick slices. Place them in a large pot, cover with water, and bring to a boil. Cook for 10–12 minutes, or until the sweet potatoes are fork-tender. Drain and set aside to cool slightly.

Step 3

While the sweet potatoes cool, drain the canned peaches and slice them into smaller chunks if desired. Set aside.

Step 4

Repeat the layering process with the remaining sweet potatoes, peaches, and cashews. Pour the remaining butter-sugar mixture evenly over the top layer.

Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and sprinkle mini marshmallows evenly on top (if using). Return to the oven and bake for another 10–15 minutes, or until the marshmallows are golden and the casserole is bubbling.
