Ingredients

  • 0.75 cups (softened) Unsalted butter
  • 0.5 cups Granulated sugar
  • 1 teaspoons Vanilla extract
  • 1.5 cups All-purpose flour
  • 0.25 teaspoons Salt
  • 0.5 cups Finely chopped pecans (for topping)
  • 0.5 cups Brown sugar (for filling)
  • 3 tablespoons Heavy cream
  • 2 tablespoons Butter
  • 0.5 teaspoons Vanilla extract (for filling)
  • 0.75 cups Chopped pecans (for filling)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2

In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the vanilla extract and mix again.

Step 3

Gradually mix in the flour and salt until the dough comes together. The dough should be soft but not sticky.

Step 4

Scoop out 1-inch balls of dough (about 1 tablespoon each) and place them onto the prepared baking sheets, spacing them about 2 inches apart.

Step 5

Use your thumb or the back of a spoon to create a small indentation in the center of each cookie. Be careful not to press all the way through.

In a small saucepan over medium heat, combine the brown sugar, heavy cream, and butter for the filling. Stir until the butter is melted and the mixture begins to simmer. Remove from heat and stir in the vanilla and chopped pecans.

Spoon about 1 teaspoon of the pecan filling into the indentation of each cookie. Be careful not to overfill.

Bake the cookies in the preheated oven for 10–12 minutes, or until the edges begin to turn golden. Rotate the baking sheets halfway through baking for even cooking.

Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Store the cookies in an airtight container for up to a week or freeze for longer storage.
