  • 8 large eggs
  • 1.5 cups whole milk
  • 1 teaspoon salt

  • 1 pound ground breakfast sausage
  • 1 medium yellow onion, diced
  • 1 medium red bell pepper, diced
  • 2 cups baby spinach, roughly chopped
  • 2 cups sharp cheddar cheese, shredded
  • 3 cups hash browns, frozen and thawed
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with nonstick spray or butter.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the ground breakfast sausage and cook until browned, breaking it up with a wooden spoon, about 6-8 minutes. Remove the cooked sausage from the pan and set aside.

In the same skillet, add the diced onion and red bell pepper. Cook for 3-4 minutes until softened, then stir in the baby spinach and cook for another minute until wilted. Remove the vegetables from heat and set aside.
