Ingredients

  • 400 grams Hokkien noodles
  • 300 grams Large prawns, peeled and deveined
  • 2 tablespoons Soy sauce
  • 2 tablespoons Oyster sauce
  • 1 tablespoon Dark soy sauce
  • 1 teaspoon Sesame oil
  • 1 teaspoon Cornstarch
  • 3 cloves Garlic, minced
  • 1 teaspoon Ginger, minced
  • 1 large Carrot, julienned
  • 1 medium Red bell pepper, sliced
  • 150 grams Bok choy, roughly chopped
  • 100 grams Bean sprouts
  • 2 tablespoons Vegetable oil
  • 1 cup Chicken or vegetable stock
  • 2 stalks Green onions, sliced
  • 1 pinch White pepper

Directions

Step 1

Prepare the sauce by combining soy sauce, oyster sauce, dark soy sauce, sesame oil, and cornstarch in a small bowl. Set aside.

Step 2

Heat a large wok or skillet over high heat. Add 1 tablespoon of vegetable oil.

Step 3

Season the prawns with a pinch of white pepper and sear them in the wok for 1-2 minutes per side until they turn pink and are just cooked. Remove and set aside.

In the same wok, add the remaining 1 tablespoon of vegetable oil. Sauté the minced garlic and ginger for 30 seconds until fragrant.
