Ingredients

  • 6 pieces Bratwursts
  • 1 bottle (12 oz) Hofbrau beer
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion, diced
  • 3 cloves Garlic, minced
  • 2 medium Carrots, diced
  • 2 Celery stalks, diced
  • 2 cups Canned cannellini beans, drained and rinsed
  • 1 cup Diced tomatoes (canned)
  • 1 cup Chicken stock
  • 1 leaf Bay leaf
  • 2 sprigs Fresh thyme
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons, chopped Fresh parsley (for garnish)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet or Dutch oven over medium-high heat.

Step 2

Add the bratwursts and sear them until browned on all sides, about 5 minutes. Remove the bratwursts and set aside.

Step 3

In the same pan, add the remaining olive oil. Sauté the diced onion, garlic, carrots, and celery until softened, about 5 minutes.

Step 4

Pour in the Hofbrau beer, scraping the bottom of the pan to deglaze and incorporate the browned bits.

Step 5

Add the cannellini beans, diced tomatoes, chicken stock, bay leaf, thyme sprigs, smoked paprika, salt, and black pepper to the pan. Stir to combine.

Step 6

Nestle the browned bratwursts into the bean ragout, ensuring they are partially submerged in the liquid.

Step 7

Bring the mixture to a simmer, reduce heat to low, and cover. Cook for 25–30 minutes, stirring occasionally, until the bratwursts are cooked through and the flavors meld together.

Step 8

Remove the bay leaf and thyme sprigs. Taste and adjust seasonings with salt and pepper if needed.

Step 9

Serve the beer brats and bean ragout in shallow bowls, garnished with fresh parsley. Pair with a cold Hofbrau beer for an authentic touch.
