Ingredients

  • 2 cups Hodgson Mill Wheat Bran
  • 1 cup Boiling Water
  • 2 cups All-Purpose Flour
  • 2 teaspoons Baking Soda
  • 0.5 teaspoon Salt
  • 2 cups Buttermilk
  • 1 cup Granulated Sugar
  • 0.5 cup Vegetable Oil
  • 2 pieces Large Eggs
  • 1 cup Raisins (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C) and lightly grease or line a 12-cup muffin tin with paper liners.

Step 2

Place the Hodgson Mill Wheat Bran in a large mixing bowl. Pour the boiling water over the bran and let it sit for 5 minutes to soften.

Step 3

In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside.

Step 4

In the bowl with the soaked bran, add the buttermilk, granulated sugar, vegetable oil, and eggs. Mix until well combined.

Step 5

Gradually add the dry ingredients to the bran mixture, stirring gently until just combined. Be careful not to overmix.

Step 6

If using raisins, fold them into the batter at this point.

Step 7

Divide the batter evenly among the prepared muffin tin cups, filling each about two-thirds full.

Step 8

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 9

Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Serve warm or at room temperature. Store leftovers in an airtight container for up to 3 days, or freeze for longer storage.
