Ingredients

  • 200 g Somen noodles
  • 120 ml Soy sauce
  • 60 ml Mirin
  • 180 ml Dashi stock
  • 1 tbsp Sugar
  • 2 stalks Green onions
  • 1 tsp Grated ginger
  • 1 tbsp Roasted sesame seeds
  • 10 pieces Ice cubes
  • 8 cups Water

Directions

Step 1

Fill a large pot with 8 cups of water and bring it to a boil over medium-high heat.

Step 2

Add the somen noodles to the boiling water and cook according to the package instructions, usually 2-3 minutes. Stir regularly to prevent them from sticking together.

Step 3

Once cooked, drain the somen noodles in a colander and rinse them thoroughly under cold running water to cool them and remove excess starch.

Step 4

Place some ice cubes in the rinsed noodles to keep them chilled, then set them aside.

Step 5

In a small saucepan, combine the soy sauce, mirin, dashi stock, and sugar. Heat the mixture over medium heat until the sugar dissolves completely. Remove it from the heat and let it cool to room temperature.

Finely chop the green onions and set them aside. Grate the ginger and set it aside as well.
