Ingredients

  • 1.5 cups basmati rice
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 medium yellow onion, finely chopped
  • 1 medium carrot, diced
  • 2 cloves garlic cloves, minced
  • 3 cups chicken or vegetable broth
  • 1 leaf bay leaf
  • 1 teaspoon ground cumin
  • 0.5 teaspoon ground turmeric
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup frozen peas
  • 0.25 cup slivered almonds, toasted
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Rinse the basmati rice under cold running water until the water runs clear. Drain and set aside.

Step 2

In a large, heavy-bottomed skillet or saucepan, heat the butter and olive oil over medium heat until the butter is melted.

Step 3

Add the chopped onion and diced carrot. Sauté for 3-4 minutes, stirring occasionally, until the onion is translucent and the carrot begins to soften.

Step 4

Stir in the minced garlic and cook for 1 more minute until fragrant.

Step 5

Add the rinsed basmati rice to the skillet. Stir well to coat the rice with the butter and oil, and toast for 2 minutes, stirring constantly.

Step 6

Pour in the chicken or vegetable broth, and add the bay leaf, ground cumin, turmeric, salt, and black pepper. Stir to combine.

Step 7

Bring the mixture to a gentle boil, then reduce the heat to low. Cover the skillet with a tight-fitting lid and simmer for 15 minutes, or until the rice is tender and the liquid is fully absorbed.

Step 8

Remove the skillet from the heat and let it sit, covered, for 5 minutes. This allows the rice to steam and fluff up further.

Step 9

Gently fold in the frozen peas, toasted slivered almonds, and chopped parsley. Let the residual heat warm the peas for 1-2 minutes.

Step 10

Fluff the rice pilaf with a fork and remove the bay leaf before serving.

Step 11

Serve warm as a side dish or enjoy it as a standalone meal.
