  • 2 cups Beef or venison stock
  • 15 ounces Kidney beans, drained and rinsed
  • 15 ounces Black beans, drained and rinsed
  • 2 tablespoons Chili powder
  • 1.5 teaspoons Ground cumin
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Cayenne pepper
  • 1 teaspoon Dried oregano
  • 1.5 teaspoons Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Fresh cilantro, chopped (for garnish)

  • 0 to taste Shredded cheddar cheese (optional, for garnish)

Directions

Step 1

In a large pot or Dutch oven, heat the olive oil over medium heat.

Add the diced onion and green bell pepper. Sauté for 4-5 minutes until softened.

Stir in the minced garlic and cook for 1 minute, until fragrant.
